In this talk I will dispel the myths and show you the true origins of our national drink, and how Belgium became the candle bearer of diversity, and the precursor to craft. And that not everything here is what it seems...

If you are a wine lover you have most likely come across a bottle of wine that has some level of Brett infection but is this shoddy winemaking or just terroir? By covering the basics of winemaking and focusing on the powerhouses of fermentation, let’s look at good, the bad and the ugly yeasts involved in vinification and what they bring to the table.
